Tandoori Chicken
½ tsp chilli powder 1 tsp pepper 1 tsp salt 2 Tblspns lemon juice 1.5 kg chicken pieces or thighs 3 cloves garlic 4 Tblspns unsweetened yoghurt 5 cm piece of ginger 1 Tblspn corriander seeds 2 tsp cumin seeds 60 gm butter
- mix chilli powder, pepper, salt, and lemon juice together
- slash the chicken pieces and rub the mixture into the cuts
- set aside for at least 1 hour
- place yoghurt, garlic, ginger, coriander, and cumin in a blender or food processor and work to a paste
- spread paste all over the chicken pieces
- leave overnight
- place chicken pieces on a rack in a roasting pan
- pour butter over chicken pieces
- cook in a preheated oven until tender
