High Energy Muffins
2 cups grated carrot and apple with skin on ½ cup sultanas ½ cup chopped nuts ½ cup dessicated coconut 2 cups flour 1 cup sugar 2 tsp baking soda 2 tsp ground cinnamon pinch salt 2 eggs ¾ cup oil 2 tsp vanilla essence
- combine carrot and apple, sultanas, nuts, coconut, and dry ingredients
- beat eggs with oil and vanilla
- mix until just combined
- bake in muffin tins or paper cups at 180°C for 15 to 20 minutes
