Recipes Fruit Cobbler

Fruit Cobbler

4 large peaches or other soft fruit, or two 400 gr tins fruit 2 cups flour 1 cup sugar 100 gr melted butter 3 tsp baking powder ½ cup milk 1 egg 2 tsp cinnamon

  • preheat oven to 200°
  • grease an ovenproof dish
  • drain or wash the fruit, then quarter, removing stones or pips
  • slice the fruit and place in bowl with half the sugar and half the cinnamon
  • in a large bowl combine the remaining dry ingredients
  • in a pot whisk together melted butter, milk, and egg
  • stir liquid ingredients into dry ingredients to form a stiff batter
  • spread a third the batter in the dish, add the sliced fruit, then cover with the remaining batter
  • sprinkle with a little sugar
  • bake for 40 to 50 minutes until springy and golden
  • dust with icing sugar to serve
