Chilli Con Carne
1 Tblsp oil 2 onions chopped 1 clove garlic 1 green pepper chopped 500 g lean beef mince 1½ tsp chilli powder 1 cup water 300 g can tomato paste ¼ tsp oregano salt 465 g can red kidney beans
- heat oil in a large frying pan or saucepan
- add onions, garlic, and green pepper
- cook until onion is clear
- stir in meat and cook until meat is browned
- add chilli powder, water, tomato paste, oregano, and season with salt to taste
- bring to the boil, stirring constantly
- reduce heat and simmer gently for 30 minutes or until mixture is quite thick
- drain beans and add to pan
- continue cooking for a further 10 minutes, stirring occasionally
